A revolution in retail pricing might be imminent. Dynamic pricing practices, which are usually encountered online, might make their way to stationary retail and challenge the preeminence of fixed prices. Grocery retailers in Germany are currently implementing electronic shelf labels (ESL) to digitally display product prices. This thesis investigates (1)the implications that the introduction of ESL might have on grocery retailers' pricing practices and explores (2)consumer perception of the frequent price changes, associated to dynamic pricing models. An extensive literature review suggested that ESLs enable fast and easy price changes and would therefore complement dynamic pricing practices. The results of a conducted survey imply that consumers have a lack of price knowledge and a tendency to overestimate prices. The results further indicate that price consciousness varies across certain consumer groups, and is especially low for consumers that go grocery shopping in the evening and those, who do not plan their shopping activities. Finally, they indicate that fairness perception of price changes differs significantly between different conditions and product groups. The thesis concludes with implications for theory and practice, as well as future research propositions.

With a series of experiments, Lena Himbert highlights the influence of the unit price’s unit of measure on the consumer’s price-level perception and quality perception. Furthermore, this thesis shows that the unit price availability and prominence influences the consumer’s store price image. When shopping for pre-packaged products, consumers are offered a variety of product and price information at the point of purchase. The unit price represents price information given to the consumer for which the factor package size is removed and thereby lowers the information load for consumers in the shopping situation. However, retailers have considerable leeway concerning the unit price format. Aspects that can be varied are for example the unit of measure (e.g., price per kg vs price per 100 g) or font size. There is little to no previous research that gives advice to retailers how they should indicate the unit price on the price label.

We use the adoption of electronic shelf labels (ESLs) by an international grocery retailer in 2015 to identify the effects of physical menu costs (i.e., labor and material costs of price adjustment) on retail performance. We find that the installation of ESLs increased gross margins substantially, which implies profit gains that go far beyond labor cost savings. We also explore the mechanism behind this effect. We find that the lift in gross margins was associated with an increase in quantity sold and a decrease in price per unit sold, and that the lift primarily came from low-shelf life product categories. Moreover, we find that more and smaller price changes occurred with ESLs. These additional price changes were mostly price decreases, and were dispersed in time. Our findings are consistent with reductions in both variable and fixed menu costs (i.e., both costs that scale with the number of products affected and costs that do not).
