The Los Cabos story all started back in 1999 when we decided to move to Tulsa, Oklahoma and open a quick-service restaurant called Atomic Burrito. The chance to put your own thumbprint on a restaurant is a scary yet exciting time. We had seen other Mexican food quick-service restaurants around the country and thought they had something, but had not really done it all the way. We made a promise to ourselves that we would use only the highest quality products. We researched fajita steak and chicken marinade recipes. We took each and every recipe and made them over and over again until we felt it was the best in town. I remember making the chili con carne, one of the most important sauces, at least 15 times until we felt it was a home run. That was our dedication to quality. The guest immediately flocked in because of high quality food and reasonable prices. This concept became the foundation for what is now the most decorated Mexican restaurant in the state of Oklahoma. Chef Jimmy Blacketer did not go to culinary school to learn his skills. Although he did attend the University of Oklahoma while studying communications degree, he learned everything by rolling up his sleeves and spending hundreds of days in the kitchen. He was very blessed by the opportunity to spend time with a group of Hispanic employees that started with him day one at Atomic Burrito and still remain today as loyal employees (family!). Adela, Ernesto Gonzales, Willy Gonzales and Estella, have all made contributions to our concept. Adela is our head prep associate and has been my \Mexican food mother\ since 1999. We have both worked tirelessly developing these recipes. Enjoy.

Oklahoma is one of the western states in the United States that sits directly above Texas. When you think of the mid-west with the cowboys and prairies, Oklahoma comes to mind. Oklahoma is the home of the Land Rush of 1889 where the government gave away two million acres of land in a great race. Oklahoma is known for cattle, American buffalo, otherwise known as the bison, and prairies of wheat. Oklahoma has many traditional dishes that encompass the spirit of the west. This includes chicken fried steak, cornbread and grits. Oklahoma has more official state foods than any other state in America. Some examples are strawberries, yellow squash, watermelon, black eyed peas, okra and pecan pie. You will never go hungry when you visit Oklahoma. The only problem will be deciding what foods to sample from all the delicious traditional Oklahoma recipes available.

The Anarchist Cookbook will shock, it will disturb, it will provoke. It places in historical perspective an era when "Turn on, Burn down, Blow up" are revolutionary slogans of the day. Says the author" "This book... is not written for the members of fringe political groups, such as the Weatherman, or The Minutemen. Those radical groups don't need this book. They already know everything that's in here. If the real people of America, the silent majority, are going to survive, they must educate themselves. That is the purpose of this book." In what the author considers a survival guide, there is explicit information on the uses and effects of drugs, ranging from pot to heroin to peanuts. There i detailed advice concerning electronics, sabotage, and surveillance, with data on everything from bugs to scramblers. There is a comprehensive chapter on natural, non-lethal, and lethal weapons, running the gamut from cattle prods to sub-machine guns to bows and arrows.

A namesake of her native state, Oklahoma Unruh proudly wore her name for more than ninety years, expressing the same spirit of adventure and courage that pervades the Sooner State. Trained in the kitchen from an early age, Oklahoma's passion for cooking from scratch inspired one of Oklahoma City's most popular and respected restaurants for nearly 20 years. This cookbook is not only filled with the real-butter and pure-cream recipes that were the hallmark of Cathy's Cupboard, it also chronicles the strength, virtues and good humor of an Oklahoma native daughter and her family. Through the eyes of one of her daughters, tribute is paid to the spirit-nourishing goodness of a woman named Oklahoma and her unique approach to life and the palate. A true celebration of life, family, friendship and love of culinary indulgence, Oklahoma Was Her Name is a treasure to be passed on from Oklahoma's family to yours. Elinor "Ellie" Unruh White owned and operated Cathy's Cupboard in Oklahoma City after purchasing it from her niece in 1995. One of five children born to Oklahoma Unruh and husband Robert, Ellie worked alongside her mother and sister at the restaurant. She graduated from Classen High School in Oklahoma City, attended Principia College in Illinois and later graduated from the University of Oklahoma. Ellie raised a family in Chandler, Oklahoma, where she also owned an interior design business and wrote weekly newspaper columns for the Lincoln County News. She was a member of Chandler's City Planning Commission, chairman of Chandler's Historic Preservation Commission and active in the Lincoln County Historical Society. Ellie was a founder and past president of the Lincoln County Arts and Humanities Council, served as chairman of the Lincoln County Republican Party and was appointed by Governor Henry Bellmon to the Oklahoma Housing Finance Authority.
