Abstract: Healthful living and joyful eating are the themes of this unique cookbook of vegetarian recipes and sound nutrition information. Recipes for a variety of main dishes, casseroles, breads, desserts, soups, vegetables, and starches are grouped and presented by season (fall, winter, spring, summer). Nutritional analyses for calories, protein, carbohydrate, fat, and selected vitamins and minerals are charted for single servings of each recipe item. Ingredients that may be new to those unfamiliar with vegetarian cooking are introduced. Other topics include 1) a daily food guide for lacto-ovo vegetarians, 2) the special nutritional needs of pregnant and lactating women, and athletes, and3) suggestions for weight loss diets.
