Excerpt from The Road to Good Nutrition All parents want their children to be well nourished. If this de sire is to be realized, the parents should have in mind a picture of what a well-nourished child is like and what their own child, with his particular heredity, is capable of attaining. If they will learn to recognize the characteristics of a well-nourished child, as a farmer or a housewife recognizes the characteristics of an excellent ear of corn or loaf of bread, they will be better able to direct their children along the road to good nutrition. If they have no standard by which to judge the child's nutrition they may think that it is good when in reality it is poor. A description of the well-nourished child is given in this bulletin, with a general outline of the care that should bring about this desirable condition. Some of the signs that indicate nutritional failure in a child are described, and the chief hazards to nutrition at various periods of a child's life are pointed out, so that parents, with the advice of their physician, may recognize and deal with these hazards. An effort has been made to give a general view of the problem of nutritional guidance throughout the period of growth, with special at tention to the continuity of the child's life. Throughout the bulletin emphasis has been put on the positive side of good nutrition and the methods of attaining it. Excerpt from Vital Factors of Foods, Vitamins and Nutrition Investigations made during the past decade have brought forth a discovery of the utmost importance to the well-being of mankind. And the discovery is this: In the foods we eat or should eat there are present very small amounts of certain life-giving and disease preventing bodies, the consumption of which is essential to growth and good health. Such bodies are called vitamins. Before the day when the import of vitamins came to be recognized we were well satisfied to believe that an adequate supply of protein, fat, carbohydrate, mineral salts and water met our food requirements fully. Food charts were widely disseminated which made it appar ent that the heat units of food, the calories available, were the essential factors in the control of a diet or ration. Women's clubs and other organizations were addressed on this score so often and emphatically that many a conscientious housewife kept scales in the kitchen to weigh protein, fat and carbohydrates and thereby com pute the daily distribution and consumption of calories. Excerpt from Proper Nutrition: Food and Its Relation to Our Body Health and What It Needs Health is the normal process of all life functions in the organs of our body. What is necessary for the maintenance of that life process, (Health)? The answer is air, light, water, action and rest. The human being has forgotten how to regulate these life necessities according to quality and quantity, while the more fortunate lower animal has at least its instinct as a guide. Natural Science must, therefore, replace the missing instinct in us, as long as ignorance in diet is one of the causes of abnormal condition in our bodies. Some may ask, why is it if wrong supply is the cause of wrong function in our body, that this logical thought is overlooked and only the effect is recognized? Almost ninety percent, of every hundred want to be given remedies rather than do their own thinking and learning the cause in order to remove it. If our grandfathers had their whiskey, meat and potatoes every day and our grandmothers lived to be ninety-four years old and drank six cups of coffee each day along with cake and pie, why should we condemn these foods and change our diets? These and like questions are asked not only by the laity but also by our so-called Health Students. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books. Excerpt from An Outline of the Pirquet System of Nutrition IN the years 1917 - 1919 I published my new System of Nutrition in four volumes. It is written in German and is rather too large for medical practitioners, as it contains many detailed protocols of the scientific ma terial upon which the system is based. When I was invited to be a Silliman Lecturer at Yale University in the winter of 1921-1922 several of my lectures on'modern Pediatrics were ou this subject of nutrition, and I was asked by many friends to prepare a short book in English which would contain the principal facts and the practical application of the system.
