This collection of essays provides an overview of new scholarship on recipe books, one of the most popular non-fiction printed texts in, and one of the most common forms of manuscript compilation to survive from, the pre-modern era (c.1550–1800). This is the first book to collect together the wide variety of scholarly approaches to pre-modern recipe books written in English, drawing on varying approaches to reveal their culinary, medical, scientific, linguistic, religious and material meanings. Ten scholars from the fields of culinary history, history of medicine and science, divinity, archaeology and material culture, and English literature and linguistics contribute to a vibrant mapping of the aspirations invested in, and uses of, recipes and recipe books. By exploring areas as various as the knowledge economies of medicine, Anglican feasting and fasting practices, the material culture of the kitchen and table, London publishing and concepts of authorship and the aesthetics of culinary styles, these eleven essays (including a critical introduction to recipe books and their historiography) position recipe texts in the wider culture of the sixteenth, seventeenth and eighteenth centuries. During the mid- to late seventeenth century, women in Irish houses from elite backgrounds started to collect recipes, which they recorded in domestic manuscripts. While these manuscripts were made elsewhere at an earlier date, they were an almost entirely new arrival to Ireland in this period, and their sudden proliferation said much about changes taking place in society at large. This book is a detailed study of such manuscripts from the perspective of historical archaeology, which will argue that they are artifacts which clearly demonstrate that a profound series of changes was taking place. The written word penetrated people’s daily lives and homes to a degree that it had not in previous periods, and it had a profound influence on how they related to their world, objects, and each other. While this book will address how we can use them as sources for the study of food history and material culture, it is ultimately concerned with the meanings of manuscript recipe books, and specifically, what they say about the individuals and society that made them. The proliferation of these manuscripts signaled a profound change not just in cuisine, but also in the way people thought about and related to food as a form of material culture. Ultimately, this book will argue that these manuscripts are not simply excellent records which can tell us about "material culture" within the early modern house, but that they are a profoundly important type of artifact in their own right. Undertaking research that situates textual objects such as recipe books at the very core of historical archaeology is critical to understanding some of the most significant changes that took place in the early modern world.

Across early modern Europe, men and women from all ranks gathered medical, culinary, and food preservation recipes from family and friends, experts and practitioners, and a wide array of printed materials. Recipes were tested, assessed, and modified by teams of householders, including masters and servants, husbands and wives, mothers and daughters, and fathers and sons. This much-sought know-how was written into notebooks of various shapes and sizes forming “treasuries for health,” each personalized to suit the whims and needs of individual communities. In Recipes and Everyday Knowledge, Elaine Leong situates recipe knowledge and practices among larger questions of gender and cultural history, the history of the printed word, and the history of science, medicine, and technology. The production of recipes and recipe books, she argues, were at the heart of quotidian investigations of the natural world or “household science”. She shows how English homes acted as vibrant spaces for knowledge making and transmission, and explores how recipe trials allowed householders to gain deeper understandings of sickness and health, of the human body, and of natural and human-built processes. By recovering this story, Leong extends the parameters of natural inquiry and productively widens the cast of historical characters participating in and contributing to early modern science.

This volume offers the user a guide to the neglected field of how-to books. How do I make soap? How do I dye textiles? What ingredients do I need for a effective remedy? How can one find and mine mineral resources, how does one make pewter cups or a good meal? Practical information of this kind, on distillation, medicine, dyeing, cosmetics, glassmaking, ceramics, metallurgy and many other subjects, flooded the book market in the first centuries of printing. As varied as these subjects are the research questions that we might ask: How do you learn practical skills from a book? Why were these books so popular, who used them and how, and can they even be considered to be a clearly defined genre? The aim of this volume, which emerged from a conference at the Herzog August Bibliothek Wolfenbüttel, is to find out which patterns characterise the genre of how-to books or “Rezepte-Büchlein”. It also aims to contribute to the clarification of terms for a genre, that operates under labels such as “Books of Secrets” and "recipe books" or, in German-speaking countries, "Kunst- und Wunderbuch" or “nützlich büchlein”. Some key issues addressed in the book include the traces of book use, the media shift from manuscript to print, the interaction between text and image, and the praxeological dimension of practical books. Self-help literature not only made it possible for interested laypersons to obtain information from all possible fields of knowledge, largely independent of institutional and educational environments; as "tracts for action" they differed from other genres in that they were consistently oriented towards implementation.

'The Open Access publishing costs of this volume were covered by the Dutch Research Council (NWO), Veni-project “Leaving a Lasting Impression. The Impact of Incunabula on Late Medieval Spirituality, Religious Practice and Visual Culture in the Low Countries” (grant number 275-30-036).' This volume explores various approaches to study vernacular books and reading practices across Europe in the 15th-16th centuries. Middle English Medical Recipes and Literary Play, 1375-1500 is the first detailed, book-length study of Middle English medical recipes in their literary, imaginative, social, and codicological contexts. Analysing recipe collections in over seventy late medieval manuscripts, this book explores how the words and structures of recipes could contribute to those texts' healing purpose, but could also confuse, impede, exceed, and redefine that purpose. The study therefore presents a challenge to recipes' traditional reputation as mundane, unartful texts written and read solely for the sake of directing practical action. Crucially, it also relocates these neglected texts and overlooked manuscripts within the complex networks forming medieval textual culture, demonstrating that—though marginalized in modern scholarship—medical recipes were actually linguistically, formally, materially, and imaginatively interconnected with many other late medieval discourses, including devotional writings, romances, fabliaux, and Chaucerian poetry. The monograph thus models for readers modes of analysis and close reading that might be deployed in relation to recipes in order to understand better their allusive, fragmentary, and playful qualities as well as their wide-ranging influence on medieval imaginations.
