Excerpt from Tests of Overseas Shipments of California Citrus Fruit, Interrelations Between Fruit Condition, Biphenyl Content, Transit Temperature, Delayed Loading, and Biphenyl Pad Placement: Marketing Research Report 830 Penicillium - induced decay and soilage can be suppressed in shipments of citrus fruits if paper pads treated with biphenyl are placed in the shipping containers. However, varying quantities of biphenyl are absorbed by the fruit and under certain conditions of transport and handling, the fruit may retain biphenyl resi dues that exceed legally permissible tolerances. (the European Economic Community (eec) accepts any residue value at or below 70 parts per million.) To obtain data on the problem of giving citrus fruit maximum biphenyl protection with out exceeding acceptable biphenyl residues, and to obtain information on transit temperature and condition of fruit transported by several methods, test shipments of citrus fruits were sent from California to Rotterdam, the N ether lands, in 1967. These test shipments consisted of 36 orange lots, nine lemon lots, and six grapefruit lots. Most of the fruit was sent by rail to the Atlantic seaboard for transit to Rotterdam by ship. Some, however, was sent by ship from California to Rotterdam via the Panama Canal. The temperatures of most of the test ship ments of oranges sent east by rail were higher than desirable while the oranges were in the railcars. Excerpt from Shipping Tests With California Citrus Fruit From Los Angeles to Rotterdam Detailed observations of six shipments of California oranges, grapefruit, and lemons from Los Angeles to Rotterdam, April to September 1955, indicate that some of the problems concerned with maintaining and expanding the European market can be solved through better selection of fruit and improved handling and refrigera tion before, during, and after shipment. Thorough precooling before loading into the refrigerated ships is the most urgent need. Most commercial refrigerated ships are not equipped to cool warm fruit sufficiently after loading. The tests show that strict adherence to the best handling procedures already known to the industry can solve the problems of bruising and other damage that occurs during handling. When transported on ships with adequate refrigeration facilities, test oranges of high carrying quality arrived at destination in excellent condition and retained their quality satisfactorily for 3 weeks. The processing of fruits continues to undergo rapid change. In the Handbook of Fruits and Fruit Processing, Dr. Y.H. Hui and his editorial team have assembled over forty respected academicians and industry professionals to create an indispensable resource on the scientific principles and technological methods for processing fruits of all types. The book describes the processing of fruits from four perspectives: a scientific basis, manufacturing and engineering principles, production techniques, and processing of individual fruits. A scientific knowledge of the horticulture, biology, chemistry, and nutrition of fruits forms the foundation. A presentation of technological and engineering principles involved in processing fruits is a prelude to their commercial production. As examples, the manufacture of several categories of fruit products is discussed. The final part of the book discusses individual fruits, covering their harvest to a finished product in a retail market. As a professional reference book replete with the latest research or as a practical textbook filled with example after example of commodity applications, the Handbook of Fruits and Fruit Processing is the current, comprehensive, yet compact resource ideal for the fruit industry.
