"Micro-organisms affect everyone. Some are helpful, while others are harmful. Pathogenic micro-organisms can cause diseases like sore throats, influenza, tuberculosis and AIDS. Decomposer micro-organisms decay rotting plant and animal matter, returning important nutrients back into the soil. Food spoilage micro-organisms such as mould ruin stored food. Other bacteria and yeasts are vital to the production of food and drinks like yoghurt and bread, and beer and wine. The Marvellous micro-organisms unit is an ideal way to link science with literacy in the classroom. It provides opportunities for students to develop an understanding of the role of micro-organisms in food and medicine. Students investigate the conditions micro-organisms need to grow, learn about yeast and the bread-making process, and research the development of penicillin." -- p. i.

"Microorganisms include bacteria, actinomycetes, yeasts, molds, and viruses, among which bacteria are the most prevalent in nature, accounting for 90%-95% of microorganisms. Some microorganisms are visible to the naked eye, such as mushrooms, Ganoderma lucidum, etc. Other microorganisms are "acellular organisms" composed of a few components, such as nucleic acids and proteins. Microorganisms are tiny and closely related to humans, comprised of a variety of beneficial and harmful species. The new coronavirus (2019-nCOV) that broke out in 2019 is a large virus family that is highly infectious. The rapid spread of 2019-nCOV globally has made the public recognize the importance of microorganisms in medicine, as well as their involvement in food, industry, agriculture, environmental protection, sports and many other fields. The present book revolves around the introduction to microorganisms and reviews relevant achievements in the field. The book is arranged in six important sections, including (i) quantitative optical microscopy in microbiology, (ii) introduction to important yeast genera in food biotechnology, (iii) nitrogen fixation and plant growth promotion by rhizobia with major emphasis on soybeans in Asia, (iv) endophytic fungus Piriformospora indica and its interaction with horticultural plants, (v) biodiversity of arbuscular mycorrhizal fungi in tropical Indonesia, and (vi) root rot and continuous cropping obstacles. This book provides important support for graduate students and researchers in the study of microorganisms while summarizing some new advances, particularly in rhizobia"--

Microbiology of Foods 6: Microbial Ecology of Food Commodities was written by the ICMSF, compris ing 19 scientists from II countries, plus 12 consultants and 12 chapter contributors. This book brings up to date Microbial Ecology of Foods, Volume 2: Food Commodities (1980, Academic Press), taking account of developments in food processing and packaging, new ranges of products, and foodborne pathogens that have emerged since 1980. The overall structure of each of the chapters has been retained, viz. they cover: (i) the important properties of the food commodity that affect its microbial content; (ii) the initial microbial flora at slaughter or harvest; (iii) the effect of harvesting, transportation, processing and storage on the microbial content; and (iv) the means of controlling processes and the microbial content. The section on Choice of Case has not been included in this 2nd edition, reflecting the changed emphasis in ensuring the microbi ological safety of foods. At the time of publication of Microbial Ecology of Foods, Volume 2: Food Commodities, control of food safety was largely by inspection and compliance with hygiene regulations, coupled with end-product testing. Such testing was put on a sound statistical basis through sampling plans introduced in Microorganisms in Foods 2: Sampling for Microbiological Analysis: Principles and Specific Applications (2nd edition 1986, University of Toronto Press).
