Interfacial properties dominate the behaviour of colloidal systems. To understand these systems, a thorough appreciation of interfacial thermodynamics is useful, especially when adsorption occurs. This paper presents a discussion of the principles that govern interfaces of liquid/liquid, liquid/solid and liquid/vapour systems in relation to adsorption and the Gibbs Surface Excess. The Guggenheim-Adams model is compared with the Gibbs model. Special features of adsorption relative to thermodynamic properties, problems and assumptions for complex heterogeneous systems are discussed and the influence of temperature increase on surface entropy of liquid/vapour and liquid/liquid interfaces is surveyed with examples. Classical empirical relations developed in the past are illustrated in examples taken from metallurgy and heat transfer studies. Surface entropy as influenced by changes in adsorption with increased temperature is discussed in relation to polarography, polymers, proteins, surfactants, and emulsions, with special emphasis given to enhanced oil recovery.
