In this work, several case studies involving complex short-time and small-scale behavior of fluid interfaces are presented. The case studies themselves are essentially unique -- involving various forces and effects (mechanical, chemical, electromagnetic, and thermal), and requiring different experimental techniques in order to elucidate the nature of the phenomena and to address the open questions. Some of the phenomena we explore are familiar to most individuals, for example spilling coffee while walking, the formation of a splash due to the impact of a solid object on a liquid surface, or the bursting of soap films. Others are not, like the behavior of coating flows, or the seemingly self-sustained behavior of micro-scale droplet formation using surfactant gradients. But all share intriguing questions, and interesting answers. This tour through a variety of interfacial phenomena has at its purpose, the goal of answering important open questions. The answers serve to verify existing theoretical predictions, resolve disputes between competing theories, and reveal the nature of previously reported behaviors.

Particles at Fluid Interfaces encompasses the processes and formulations that involve the stabilisation of fluid interfaces by adsorbed particles. The prevalence of these multiphase materials underpins their use in a broad range of industries from personal care and food technology to oil and mineral processing. The stabilisation conferred by the adsorbed particles can be transient as found in froth flotation or long-lived as occurs within Pickering Emulsions. The particles can range in size from nanoparticles to millimetre-sized particles, and cover a spectrum from collapsed proteins, polymeric colloids of controlled size and shape to high dispersity mineral particles.

Fluid interfaces are promising candidates for confining different types of materials, e.g., polymers, surfactants, colloids, and even small molecules, to be used in designing new functional materials with reduced dimensionality. The development of such materials requires a deepening of the physicochemical bases underlying the formation of layers at fluid interfaces as well as on the characterization of their structures and properties. This is of particular importance because the constraints associated with the assembly of materials at the interface lead to the emergence of equilibrium and features of dynamics in the interfacial systems, which are far removed from those conventionally found in traditional materials. This Special Issue is devoted to studies on the fundamental and applied aspects of fluid interfaces, and attempts to provide a comprehensive perspective on the current status of the research field.

The presence of drops, bubbles, and particles affects the behavior and response of complex multiphase fluids. In many applications, these complex fluids have more than one non-Newtonian component, e.g., polymer melts, liquid crystals, and blood plasma. In fact, most fluids exhibit non-Newtonian behaviors, such as yield stress, viscoelastity, viscoplasticity, shear thinning, or shear thickening, under certain flow conditions. Even in the complex fluids composed of Newtonian components, the coupling between different components and the evolution of internal boundaries often lead to a complex rheology. Thus the dynamics of drops, bubbles, and particles in both Newtonian fluids and non-Newtonian fluids are crucial to the understanding of the macroscopic behavior of complex fluids. This Special Issue aims to gather a wide variety of papers that focus on drop, bubble and particle dynamics in complex fluids. Potential topics include, but are not limited to, drop deformation, rising drops, pair-wise drop interactions, drop migration in channel flows, and the interaction of particles with flow systems such as pastes and slurries, glasses, suspensions, and emulsions. We emphasize numerical simulations, but also welcome experimental and theoretical contributions.

This book serves as an introduction to the continuum mechanics and mathematical modeling of complex fluids in living systems. The form and function of living systems are intimately tied to the nature of surrounding fluid environments, which commonly exhibit nonlinear and history dependent responses to forces and displacements. With ever-increasing capabilities in the visualization and manipulation of biological systems, research on the fundamental phenomena, models, measurements, and analysis of complex fluids has taken a number of exciting directions. In this book, many of the world’s foremost experts explore key topics such as: Macro- and micro-rheological techniques for measuring the material properties of complex biofluids and the subtleties of data interpretation Experimental observations and rheology of complex biological materials, including mucus, cell membranes, the cytoskeleton, and blood The motility of microorganisms in complex fluids and the dynamics of active suspensions Challenges and solutions in the numerical simulation of biologically relevant complex fluid flows This volume will be accessible to advanced undergraduate and beginning graduate students in engineering, mathematics, biology, and the physical sciences, but will appeal to anyone interested in the intricate and beautiful nature of complex fluids in the context of living systems.
